Sugar Free Butterbeer Fudge

Servings: 28 (depending on size of cubes)


INGREDIENTS

  • 260 g (1 cup) sugar free sweetened condensed milk or dairy free sweetened condensed coconut milk
  • 15 g (1 tbsp) caramel extract
  • 115 g (1/3 cup) sugar free white chocolate (e.g. Lily's or ChocZero) – melted
  • OPTIONAL: 1/2 tsp cocoa powder + 1/16 tsp/pinch of instant coffee + 1 tsp heavy whipping cream (to naturally darken beer layer)
  • OPTIONAL: 5 g (1 tsp) pure rum extract (NOT used nor included in macros)
  • Creamy Fluff
  • 120 g (½ cup) heavy whipping cream or coconut cream
  • 100 g (1/2 cup) sweetener – ground to fine powder (see FYI below)
  • 2 g (1 tsp) of one of: agar, Knox gelatin powder, xanthan gum or glucomannan powder
  • 1 tsp pure vanilla extract
  • Creamy Topping Fudge
  • 150 g (5/8 cup) sugar free sweetened condensed milk or dairy free sweetened condensed coconut milk
  • 115 g (1/3 cup) sugar free white chocolate (e.g. Lily's or ChocZero) – melted
  • the entire batch of the Creamy Fluff (from above)
  • 1 g (1/8 tsp) salt – very finely ground

DIRECTIONS

  • Butterbeer fudge layer
  • 1.   Make a full batch of my Sugar Free Sweetened Condensed Milk or my Dairy Free Sweetened Condensed Coconut Milk. Remove from the stovetop and transfer into a small mixing bowl or large measuring cup. Add the optional cocoa and cream mixture to darken the “beer” layer, stirring to integrate. Add the melted white chocolate and caramel extract, stirring very well to make a homogenous mixture. Cool to room temperature, stirring frequently as the sweetened condensed milk mixture is cooling to prevent crystallization at the top

  • 2.   Pour fudge mixture into a 7 inch X 4 inch or approximately 18 cm X 10 cm parchment lined rectangular container. Run a toothpick through the fudge to break any large air bubbles and drop gently onto the counter a couple of times to level the surface. Refrigerate for about one hour or until the fudge is firmly set

  • Creamy Fluff
  • 3.   Into a large mixing bowl pour the cream and add the sweetener, gelatin (or powder of your choice), vanilla and salt. Whip at high speed to medium stiff peak stage. Set aside

  • Creamy Topping Layer
  • 4.   Pour the room temperature Sugar Free Sweetened Condensed Milk or my Dairy Free Sweetened Condensed Coconut Milk into the mixing bowl with the creamy fluff, add the room temperature melted white chocolate and the fine salt. Whip or stir to combine very well to make a homogeneous mixture

  • 5.   Pour the Creamy Topping over the Butterbeer layer. Cover the top of the container with cling wrap or a ight fitting lid. Refrigerate until the fudge is firmly set – best to leave in the refrigerator overnight

  • 6.   When set, lift the fudge out of the container using the parchment. Peel the parchment from the fudge. Cut 4 even rows lengthwise and 7 even rows along the width. This will make 28 squares which will be as even as possible

  • 7.   Store in an airtight container in the refrigerator for up to 2 weeks or freeze for longer. When this fudge has been frozen, it can be brought to room temperature by placing the container on the counter, or more slowly in the refrigerator

MACRONUTRIENTS CHART

FYI

Because of the unique properties of both Birch Xylitol and Allulose,, I have found these two sweeteners prevent the fudge from fully solidifying at room temperature. The fudge is very soft and melts easily when held in your fingers. I have found that an erythritol/monk fruit blend works well for making fudge. Also, you could use plain erythritol, or as a stevia blend. Just grind the sweetener to a fine confectionery powder before using.
