Parisian Hot Chocolate

Servings: 4


INGREDIENTS

  • 119 g (1/2 cup) heavy cream
  • 237 g (1 cup) unsweetened almond milk
  • 57 g (2 oz)  unsweetened dark chocolate  – chopped or grated
  • 12 g (2 tbsp)   dutch processed cocoa powder  
  • 25 g (2 tbsp)  monk fruit sweetener  – ground to confectionery powder
  • 1 g (1/8 tsp)   salt  – ground very fine
  • 4 g (1 tsp)   pure vanilla extract  
  • For Bulletproof Version
  • 20 g (2 tbsp)  MCT powder 

DIRECTIONS

  • 1.   Into a saucepan, add the heavy cream and unsweetened almond milk. Heat to a light simmer over medium low heat

  • 2.   Add the grated chocolate, Dutch processed cocoa powder, sweetener and salt. Stir and simmer until the solid chocolate is completely melted and the mixture thickens. Whisk and cook for between 8 – 10 minutes

  • 3.   Remove from heat and add the vanilla. Whisk vigorously to combine. Serve immediately

  • For Bulletproof Version
  • 4.   Add the MCT powder and whisk to combine

  • 5.   Serve immediately while warm. Each serving is “Parisian” size, not a cup or mug. This Parisian Hot Chocolate is very rich and thick
