Chinese 5 Minute Fried Cauli Rice

Servings: 4


INGREDIENTS

  • 400 g of riced cauliflower
  • 100 g (3 to 4 strips) of naturally smoked bacon
  • 15 g (1 tbsp)   gluten free tamari 
  • 27 g (2 tbsp)   grape seed oil 
  • 2 large eggs
  • 4 g (2 tsp)   ground ginger  (or 1 tbsp green ginger grated)
  • 40 g (3 tbsp) onion - chopped

DIRECTIONS

  • 1.   Heat a dry skillet or wok over medium high heat. Then add the oil and coat the bottom and sides well.

  • 2.   When oil is sizzling add the chopped bacon and onion and stir together. Fry for about 2 minutes until the bacon is cooked and just beginning to get crispy

  • 3.   Put the eggs into a small bowl add a 1/4 tsp of water and stir with a fork just to combine the egg whites and yolks. Do not overbeat.

  • 4.   Add the riced cauliflower and stir.

  • 5.   Immediately add the ginger powder or fresh grated ginger and the tamari.

  • 6.   Continue stirring and tossing for about 1- 2 minutes to distribute the bacon, onion, egg and seasoning over the cauli rice.

  • 7.   After no more than two minutes, remove the fried cauli rice from the hot skillet or wok and scoop into a cold bowl. The cauli rice will be done al dente. You do not want to over-cook because the cauli rice will get too mushy and not have the texture and feel of rice.

This recipe is adapted from a traditional recipe a Chinese friend taught me, while we were studying organic chemistry at uni. His recipe took more than 5 minutes because he cooked the rice and let it sit in his refrigerator overnight, and then use this prepared rice to make his fried rice. I was always amazed how quickly he was able to make the fried rice once he started. Laughing, he told me it was a Chinese student survival recipe because it was easy to make after a hard day of studying. With the rice prepared ahead of time, which he always made in large batches, he added many ingredients I have used and made his fried rice. The cauli rice works as well as the prepared rice and is just as quick to make as the basic traditional fried rice. It truly only needs about 2 minutes to be done. Do not overcook, because it will get soggy, and then it would not feel or taste as good.

My friend also used this base and turned it into a full meal. I will show you how very easy it is to turn this basic recipe, which on its own makes a great side dish to any meat entree, into a one pot/one bowl meal. The variations will be posted soon. In the meantime, enjoy!
