Smoky Chipotle BBQ Sauce and Smoky Chipotle Dry Rub

Servings: 5 for the dry rub, 9 for the BBQ sauce


INGREDIENTS

  • Dry Rub
  • 32 g (2 1/2 tbsp)   monk fruit sweetener   – ground to confectionery
  • 6 g (1 tbsp) smoked paprika or non-smoky flavor use sweet paprika
  • 2 g (1 tsp) dry mustard
  • 6 g (1 tsp)   salt   – ground extra fine
  • ½ tsp black pepper
  • 6.g (1 tsp) garlic powder
  • 6 g (1 tsp) onion powder
  • 4 g (1 tsp)   chipotle powder 
  • BBQ Sauce
  • 50 g (5 tbsp or one whole batch) Smoky Chipotle Dry Rub
  • 38 g (2 tbsp) tomato paste
  • 120 g (1/2 cup) water
  • 28 g (2 tbsp)   apple cider vinegar 
  • 16 g (1 tbsp) Worcestershire Sauce
  • 27 g (2 tbsp)   olive oil 

DIRECTIONS

  • Dry Rub
  • 1.   Into a small mixing bowl add all the dry ingredients and stir until well combined. Store in a glass airtight spice container

  • BBQ Sauce
  • 2.   Into a small mixing bowl add all the ingredients: the Smoky Chipotle Dry Rub, tomato paste, water, apple cider vinegar, and Worcestershire Sauce

  • 3.   Stir well until a smooth creamy paste forms. The mixture may be a bit runny at this point

  • 4.   Transfer into a small pot and place on medium low setting of your stovetop. Bring to a light simmer. Reduce heat to low and simmer very gently for about 20 minutes. Set aside and let cool for at least 30 minutes to allow flavors to combine. Stir before using each time

  • 5.   Store in an airtight glass container and keep in the refrigerator. Will keep for a couple of months if stored properly. Enjoy!

For best result and to keep taste as fresh as possible store in the same manner you would all your other dry spices, in a cool dark cupboard.

In case you are wondering what exactly is a chipotle, I had no idea before I started maxing Mexican/Spanish and Tex-Mex recipes, a chipotle is a smoked dried ripe jalapeno chili prepper. This Chipotle can be bought in a jar with adobe oil or as a ground up powder as the one we are using in this recipe. It has a rich flavorful and strong and moderately hot taste. Use sparingly as a little goes a long way to enhance any recipe.
