Hot Korean BBQ Sauce – Hot Gochujang BBQ Sauce

Servings: 12 (20 g or 1 tbsp each)


INGREDIENTS

  • 40 g (2 tbsp) tomato paste
  • 18 g (2 tbsp)   hot Korean red pepper flakes (“gochugaru” pepper) 
  • 17 g (1 tbsp)   monk fruit sweetener   – ground to extra fine
  • 42 g (3 tbsp)   toasted sesame oil 
  • 30 g (2 tbsp)   apple cider vinegar 
  • 20 g (1 tbsp) garlic - grated
  • 30 g (1 tbsp) ginger - grated
  • 30 g (2-3 stalks) green onion / spring onion – chopped very fine
  • 2.3 g (1 tsp) black pepper

DIRECTIONS

  • 1.   In a measuring cup or small bowl, add the roasted sesame seed oil, the tomato paste, gochugaru red pepper flakes, grated fresh ginger, grated garlic, apple cider vinegar, confectionery sweetener, black pepper and chopped green onion. Stir well

  • 2.   Let ingredients rest for a minimum of 30 – 60 minutes before using. Store in an airtight glass jar

This is an adapted version to try to achieve as close of a taste as possible without using several of the ingredients that are not part of a keto, low carb, paleo and gluten free recipe.

Gochujang or Korean Hot BBQ Sauce is used as an ingredient in many Korean recipes. The sauce will keep well in the refrigerator for several weeks if stored in an airtight glass container. If you know you will use this less frequently, freeze single tablespoon quantiles in an ice cube tray. Once frozen, store the individual cubes in an airtight, freezer-safe container (I still use glass for my freezer food). To make it easier to remove one cube at a time, position the cubes between cling wrap. I have had this in the freezer for almost 3 months and, when thawed slowly on my counter, all it needed was a good stir. The taste was amazing: I guess it develops a bit more over time. If you like a complex spicy flavor, you will love this sauce. Cheers!
